Healthy Eating Reaps Bountiful Solutions #HERBS

My definition of HERBS above is why I always have a few in my kitchen. Right now I have  cilantro and parsley as you can see from the picture above. Can you tell which is which? I love fresh herbs and use them daily. From planting, watching them grow, picking them fresh to nibble on, to use when cooking, and we can’t forget all their extraordinary medicinal benefits. So grab your garden tools, get down on your knees, and start planting! I promise the end result will be rewarding.

Below are seven favorites that are easy to grow in your garden or containers if you don’t have the space. All the herbs below enjoy plenty of sunshine, who doesn’t, but can tolerate light shade. Don’t stress when planting. Enjoy the fresh air and getting dirty; it’s good for the soul. If all else fails, you can always run to your local garden store and hand pick your ready to use herbs to enjoy. No judgement here!

BASIL
A go-to herb in the summer. Give it well-drained soil and you’ll be making pesto in no time. Be sure to pinch off any flower buds because once basil begins to flower, the leaf flavor declines.

OREGANO
A beautiful herb to plant in a pot to control growth. The small leaves are packed with flavor and perfect for topping homemade pizza.

ROSEMARY
A woody shrub with an unforgettable aroma and needle-like foliage that adds flavor to roasted potatoes and chicken dishes. The quickest way to kill container-grown rosemary is by watering it too much. It needs consistent moisture, not wet feet.

THYME
Looks beautiful when planted at the front of a container where the tiny leaves can mound over the edge of the pot. Don’t overwater; it’s drought-resistant making it easy to grow.

MINT
Love, love, love! It will quickly take over so grow mint in pots where its aggressive growth can be contained. Growing mint in your garden can help ward off ants and flies.

PARSLEY
A favorite culinary herb used in sauces, salads, and soups. It also lessens the need for salt. Parsley makes a perfect garnish and it’s also good for you; it’s rich in iron and vitamins A and C.

CILANTRO
Love it or hate it. Me, I can’t get enough of it. Cutting off the flower heads redirects the plant’s energy back into leaf and not flower or seed production. With Cinco de Mayo this weekend, what better way to celebrate than with a cilantro lime shrimp taco and tequila; the perfect pair but that’s for another post.

Apple/Carrot Beauty Brew

Ingredients:

  • 1 apple
  • 4 carrots
  • 1/2 cucumber, peeled
  • 1″ ginger root

Carrot/Orange Beauty Brew

Ingredients:

  • 4 carrots
  • 2 oranges, peeled
  • 1″ginger root

Pineapple/Cucumber Beauty Brew

Ingredients:

  • 1/4 pineapple
  • 1 cucumber
  • 2 celery stalks
  • 1 lemon, peeled

Wash your produce and add to juicer one at a time.
NOTE: Pears are always a good substitute if you don’t like pineapple.

Chocolate is Happiness You Can Eat

We’ve all heard the word superfoods; foods that contain significantly higher quantities of antioxidants, vitamins, minerals, and health-boosting benefits. I’m sure you’ve tried a few like broccoli or blueberries but I bet you’d choose chocolate over blueberries or broccoli any day. Here is the first of many super foods I’ll be informing you about so you can choose to make eating habits healthy and delicious, maybe even a little exotic like our first superfood the cacao bean. Grown in the Amazon of Peru, cacao is a fruit that grows on trees. The fruits of the cacao tree are called cacao pods, which contain cacao beans that are used as the basis of chocolate.

Did you know cacao is:

  1.  40 times the antioxidants of blueberries. Move over blueberries because cacao has an incredible ORAC score of 98,000 per 100g versus blueberries at a mere 2,400. (ORAC scores measure the ability of antioxidants to absorb free radicals.)
  2. Highest plant-based source of iron. If you need iron, cacao is the highest plant-based source of iron known to man at a whopping 7.3 mg per 100 g compared to spinach at 3.6 mg. You’ll need to combine with some Vitamin C to get the maximum benefits. Try an Easy Cacao/Banana Smoothie. (recipe below)
  3. Full of Magnesium. The most deficient mineral in the Western world, cacao is one of the highest plant-based sources of magnesium.  Magnesium is important for a healthy heart and brain and helps turn glucose into energy enabling your brain to work with clarity and focus.
  4. More calcium than cow’s milk. A latte or a couple squares of chocolate? Your choice.

 EASY Cacao/Banana Smoohtie

Ingredients
  • 1 cup almond milk
  • 1 tbsp creamy almond butter
  • 1 tbsp organic raw cacao powder
  • 1/2 tsp vanilla extract
  • 1 frozen medium banana
  • pinch sea salt
  •  ice cubes
Instructions
  1. Place all the ingredients in a blender and blend for about 2 minutes until well combined.

  2. Pour in glass and enjoy!
